Grain Free Granola

 

GRAIN FREE GRANOLA

Ingredients

Ingredients

  • 2 cups Walnuts
  • 2 cups Almonds
  • 2 cups Coconut flakes
  • 3 Egg whites
  • Cinnamon Use as much as you like
  • 2 tsp Vanilla extract
  • Goji berries Use as much as you like
  • 1 cup Sunflower seeds
  • 1 cup Pumpkin seeds

Instructions

Method

  1. Preheat oven to 150 degrees.

  2. Use a food processor to break up nuts into smaller pieces.
  3. Blend with cinnamon and coconut.
  4. Whisk the egg whites until soft peaks form and then stir vanilla.
  5. Add egg mixture to nut mixture and stir gently to cover.
  6. Spread the mixture on a baking tray covered with baking paper so it is no more than 1 inch thick.
  7. Bake for 10 minutes at a time, stirring gently to break it up into smaller chunks for 50 minutes in total.
  8. When cool, stir through goji berries, sunflower seeds, pumpkin seeds and psyllium husks and place in a sealed container in the fridge.
  9. Serve with cottage cheese whip, rice, almond or oat milk or natural yoghurt.

COCONUT WATER MOJITO-INSPIRED SMOOTHIE

Ingredients

  • 1 Cup Coconut Water
  • 1/2 Avocado
  • 1/2 Cup Mint Leaves
  • 1 Lime Juiced
  • 2 tsp Chia Seeds
  • 1 Handful Baby Spinnach
  • Ice cubes

Instructions

  1. Place all ingredients in blender and blend until smooth

Ingredients

  • 1 Banana
  • 1 Handful Frozen Berries
  • 1/2 Cucumber
  • 2-3 Pieces Kale
  • 1 tbsp Almond Butter
  • 1 tsp G-Tox express Optional
  • 1 Cup Coconut Water

Instructions

  1. Place all ingredients in blender and blend until smooth.

 

COCONUT PANCAKES

COCONUT PANCAKES

Servings 1

Ingredients

Pancakes

  • 3 Eggs
  • 1 Splash Coconut Milk or your favourite nut milk
  • 1 tbsp Coconut Flour
  • 1 tsp Raw Cacao
  • 1 tsp Psyllium Husks
  • 1 tsp Coconut Oil

Toppings

  • 1 Banana mashed
  • 1 tbsp Peanut Butter or your favourite nut butter
  • 1 tbsp Rice Malt Syrup
  • Cinnamon to taste

Instructions

  1. Whisk eggs and milk together well.

  2. Add coconut flour, cacao and psyllium and whisk until smooth. Your mixture should be thick, but pourable.

  3. Split mixture into two and lightly fry each pancake individually in coconut oil, flipping half way.

  4. Serve pancakes with topping 

    Enjoy!!
